The fruit for this wine was hand-harvested then destemmed and wild-fermented, with maceration in stainless steel for approx three weeks, then aged for 20 months in French oak barriques (approx 20% new). Racked, blended and currently in closed stainless steel tank (not on ullage).
This 2001 Siprem VS80 vacuum press is located in North Canterbury. Annual servicing and reports available. Solid press with great automation. Very gentle on grapes as it operates using a vacuum system. Bag is in excellent condition, new in 2021.
Medium light ruby red in colour, with a touch of youthful purple. On the nose there is a complex combination of chocolate, coffee and dark liquorice combined with hints of rose petal and raspberry.
