The fruit for this wine was hand-harvested on 19 & 25 March and 4 April 2018 from certified organic vineyards. Low yielding at 2 ton = 0.5-1.5 kg/vine.
Fruit Analysis at Harvest
TA: 6.5-7.8 g/L
MA: 2.0 g/L
Fermentation: Two parcels were 100% De-stemmed, not crushed, 75% Whole berries. 4 days cold soak at ambient temperature. Yeast for fermentation was propagated from a vineyard starter. Fermentation lasted 10 to 12 days with hand or foot plunging one to 2 times per day. One parcel was fermented 100% whole cluster. All wines were pressed after 28 days and racked to tight grained French, 3 to 10 year old barrels. Malo-lactic fermentation was completed in spring.
Maturation: 12-months barrel maturation, then racked to stainless steel tank where the wine settled for 6 months. Bottled without fining or filtration.
Description: Bright ruby red hue. An alluring bouquet of wild strawberry, rhubarb, nutmeg, cinnamon, vine blossom and liquorice. The palate is bright, supple, fine and long with salivating tamarillo, red currant jelly, parsley, chalk, and spring water.
