2018 was an excellent vintage, with care and patience allowing for an autumn of extended ripening. The Viognier and Syrah were harvested together as one single batch giving optimum ripeness and flavour.
The grapes were machine harvested and crushed to fermenter. A 5-day cold soak was followed by indigenous-yeast ferment which lasted approximately 6 days. Just prior to completing fermentation, the wine was pressed off skins, but put to barrel for extended maturation.
Oak Treatment: Fermentation was finished 100% in barrel, in new and seasoned French 228 Litre barriques, 35% of which were new. The wine underwent a wild malo-lactic fermentation in barrel with 18-months maturation in barrel.
