2013 was an excellent vintage allowing for an autumn of extended ripening. A field blend where the Cabernet and Merlot were harvested together as one single batch giving optimum ripeness and flavour on the 13/4/13.
The grapes were machine harvested and crushed to fermenter. A 5-day cold soak was followed by indigenous-yeast ferment which lasted approximately 6 days. Just prior to completing fermentation, the wine was pressed off skins, but put to barrel for extended maturation.
Oak Treatment: Fermentation was finished 100% in barrel, in new and seasoned French 228 Litre barriques, 50% of which were new. The wine underwent a wild malo-lactic fermentation in barrel with 18-months maturation in barrel.
