	Cleanskin Central Otago Pinot Noir 2007 (700 Cases) "Intense berry fruit, black plum and wild strawberry on the nose with spice, high country herbs and blackcurrant also abundant. Enticing and approachable with a concentrated palate and a lingering silky texture". Ripe fruit was handpicked and vinted in small batches using traditional methods. During fermentation, gentle plunging up to three times per day ensured the desired extraction of colour, structure and aroma compounds.
Following fermentation to dryness there was a ten-day post ferment maceration and the wine was then racked to French oak barriques (30 percent new) for ten months. These 26 x 225 litre Bordeaux barrels have been maintained in a temperature controlled barrel hall in a sanitary condition suitable for wine storage. They have been hot washed between fills and kept sulphured when empty. Each fill has been of approximately two years duration.
