Description: The vineyard was cropped at less than six tonnes per hectare. Grapes were 100% de-stemmed to six-tonne, open-top red fermenter. Held cold (10 degrees C) for four days cold soak to build colour and flavour. The juice was allowed to warm and was inoculated with yeast for primary fermentation. Primary ferment lasted two weeks before the wine was pressed off skins to tank and allowed to settle overnight. It was then barrelled down to French oak barriques; 28 percent new. Currently sitting on light lees in barrel, yet to go though malolactic fermentation.
